Cider & Cheese Tasting: Celebrate the height of cider season with Pete Endres, owner of Bird Dog Cider, and Carolyn Heps Shaw, co-owner of C’est Cheese, for a guided tasting dedicated to two fall favorites. Taste your way through a selection of Bird Dog’s dry, traditionally made ciders alongside a thoughtfully chosen lineup of cheeses from C’est Cheese. Pete and Carolyn will share their expertise along the way, exploring the apples, techniques, and traditions behind each cider as well as the styles, origins, and characteristics of the featured cheeses. Together, you’ll discover what makes each selection distinctive on its own, where unexpected pairings emerge, and how two wonderfully varied worlds of flavor come together. Whether you’re a cider lover, a cheese enthusiast, or simply curious to explore both, come taste, learn, and discover a few new favorites.
ABOUT PETE ENDRES
Pete Endres is owner and cidermaker at Bird Dog Farm and Cider in Greenland, NH. Bird Dog is a certified organic farm with over 30 varieties of apples, a dahlia field, and other crops planned for the coming years. Cider production is done on site in a renovated dairy barn with tasting room. Bird Dog focuses on dry ciders made with traditional methods and select apple varieties. Endres was raised on an apple farm in Western NY that his dad still operates. He graduated from Williams College and has a Masters in Environmental Analysis from Boston University.
ABOUT CAROLYN HEPS SHAW
Carolyn Heps Shaw is the owner of C’est Cheese, the beloved European-style cheese shop, wine bar, and café in Hampton, New Hampshire. A longtime member of the C’est Cheese team, Carolyn stepped into ownership in 2022, carrying forward the welcoming, tasting-focused experience that has been at the heart of the shop since it opened in 2003.
At C’est Cheese, the philosophy is simple: exploring great cheese and specialty foods should be fun, approachable, and never intimidating. Carolyn continues that tradition by helping guests discover new flavors, learn more about what they’re tasting, and find cheeses they genuinely love. Today, C’est Cheese brings together cheeses and gourmet products from around the world, along with wine, charcuterie, and an ever-growing lineup of tasting experiences.
