Whole reputations were made on little paper encased cake bombs with big icing tops. But how quickly the cupcake crumbled. Unlike the muffin craze that lasted for a good ten to twelve years, cupcakes are now as dowdy and run of the mill as a chocolate chip muffin. The take away here is don’t bet the farm on the latest trend—diversify your offerings and keep an eye out for the new next thing: we’re betting meatballs, seriously. As Adam Gopnik says, “The constant interchange between surface and substance creates the never at rest taste.”
